Honey Information...

All our honey is locally produced in the London area.

We have bee yards on different farms from Putnam area Thorndale, and St. Mary’s.

Our honey is unpasteurized.

Unpasteurized natural honey should not be fed to infants less than one year of age.

  • Monitor hives (too many queens in a hive, which causes them to split), and poor location difficulties.
  • May or early June, honey suppers are added to collect nectar and make room for expanding population of bees.
  • Harvest occurs late July, August, September and October.

Moisture content:

  • is monitored before the honey is gently heated at 35°C in stainless steel equipment.
  • It is gravity strained and not pressure filtered. Sugar or chemicals have not been added to it.
  • The bees are fed and insulated to prepare them for the winter.
  • They will fly if the temperature is above 10°C

Storage of Honey:

  • Keep in tightly closed container at room temperature.
  • Do not refrigerate.
  • For long term storage, freezing is recommended.
  • To regain the smooth texture of liquid honey that has become granular, cloudy, or that has been frozen, place the jar in a pan of hot water with the lid loosened, or warm in the microwave for a short time.
  • Be careful not to overhead as this may alter the flavour and colour.

Honey's Flavour:

  • Varies on what type of flowers the bees have visited during the season.
  • Light honey (basswood and linden, known for it's minty flavour), is collected in the spring.
  • Amber honey (golden rod) is collected in the fall.
  • People with allergies to golden rod find it helpful to ingest this particular brand.
  • Our main supply consists of clover honey which is collected throughout the season.
  • Buckwheat with it's dark colour and high nutrients, is occasionally available.

Honey Contains:

  • about 130 calories per 30ml (2 Tbs.) a little more than sugar and other sweeteners.
  • Calories can be reduced by 15% in some dishes by substituting 2/3 cup of honey for every cup of sugar.
  • Oven temperatures should be reduced by 25°F (15°C) to avoid over-browning.
  • To prevent honey from sticking to utensils, coat lightly with vegetable oil or spray.
  • Honey attracts moisture and thus keeps baked goods fresher longer.
  • It is also a good stabilizer for dressings and sauces.

Unpasteurized Honey:

  • still contains all the nutrients of the bee pollen, and when you buy it from us you can be assured of it's freshness.

Creamed Honey:

  • is made by blending honey that has granulated with liquid honey. Then it is stored in refrigerated temperatures to let it set.

Bee Pollen:

  • is the male-germinating seed of any flower, shrub or plant.
  • It is called bee pollen because the bees collect it as they go form flower to flower and take it back to the hive as food for other bees.
  • Bee Pollen contains every known vitamin, mineral, protein (amino acids), enzymes, and co-enzymes, fatty acids, and carbohydrates that our bodies need to sustain life, and all perfect balance.
  • It is a natural vitamin.
  • Allergy sufferers find it helpful as well to take pollen on a regular basis.
